It is thought that the first marzipan were the work of the nuns of San Clemente , who invented when Toledo was besieged by the Arabs, to appease the hunger of the besieged population, creating a pastry with almonds and sugar. This pastry was called “Pan de Maza”. Spain is the first country in the world as an exporter of nougat and marzipan.

Almond is an important component in the Mediterranean diet. Almonds have a high nutritional value and their composition are between proteins (20%), fiber (14%) and fat (53.5%), largely in the form of oleic acid.
